The Raw Materials
Before the fire,
the garden.
Every cup begins long before the dallah is lifted. It begins in a field, a pod, a pinch of crimson pulled from a flower at first light.
Green Coffee Beans
Unroasted, grassy, with a faint sweetness. We source single-origin beans from Yemen's Haraaz highlands — the same terroir that gave the world its first cup.
Cardamom Pods
Cracked open at the moment of brewing. The volatile oils dissipate in minutes — which is why Qahwa must be made fresh, never stored.
Saffron Threads
A pinch between two fingertips — enough to turn the cup gold and the room into memory. We use Grade 1 Persian saffron, hand-harvested at dawn.

The Transformation
The fire decides
everything.
Green beans enter a cast-iron pan over open flame. For twelve minutes, a wooden paddle turns them without pause. The room fills with smoke that smells of earth, then chocolate, then something older than both.

The beans darken to mahogany. Oils surface. The room smells like the cup you're about to drink.
The Dallah Process
The ritual has
four movements.
Styled like the recipe cards passed from grandmother to granddaughter — not instructions, but reminders of what you already know.
الطحن
Grind Coarse
The roasted beans are ground to a coarse, golden powder using a wooden mortar — never electric. The friction warms the grounds and opens the aromatics.
الغليان
First Boil
Water in the dallah is brought to a rolling boil. The grounds go in. The heat drops. You wait — without lifting the lid, without checking. Patience is the first ingredient.

Add Saffron & Cardamom
Off the flame. The cracked cardamom pods and saffron threads go in. The lid returns. Three minutes of steeping — the spices bloom into the coffee in silence.

Pour & Serve
The dallah is raised high — tradition says the pour from height aerates the coffee and cools it to drinking temperature. The finjan is filled only halfway. Always halfway. Room for conversation.
